Step One: Tender the meat for 20 minutes and set our
home griddle to its maximum temperature.
Step Two: When smoke starts being given off, spread the fat over entire surface of the griddle.
Step Three: Sprinkle with cooking salt.
Step Four: Wait for the first side of the steak to brown very well.
Step Five: Turn the steak over and slightly brown the other side.
Step Six: The meat is ready and should show a red colour inside, it being important for this that the first side is browned more than the second side.
*You may use salt flakes or table salt, in which case this is not sprinkled over the griddle but the meat is salted once it is cooked.
